Il Per’ e Palummo di Casa d’Ambra è stato ottenuto da uve 100% Piedirosso, localmente chiamato Per e’Palummo. I vigneti di provenienza, esposti a Nord-Est ed Est, insistono su terreni di matrice vulcanica di medio impasto, ricchi di potassio e fosforo, a un’altitudine compresa tra i 200 e i 300 metri sopra il livello del mare.
Il processo di vinificazione ha compreso una fase di fermentazione alcolica con macerazione del mosto effettuata con i grappoli interi per un periodo di 5-10 giorni. L’affinamento si è svolto per un breve periodo in acciaio inox e in bottiglia.
