Trentenare dal nome del Borgo che sovrasta dall’alto il nostro vigneto di Cannito, a Paestum. Un’interpretazione del Fiano caratterizzata da una nitida e limpida connotazione varietale. Coltivate a un’altitudine compresa tra i 150-210 metri sul livello del mare, con una splendida esposizione soleggiata rivolta sud-ovest.
Al termine della raccolta migliori grappoli, le uve sono sottoposte a criomacerazione per sei ore alla temperatura di 4°C. La fermentazione si svolge in serbatoi d’acciaio a bassa temperatura. Prima dell’imbottigliamento, il vino matura per 6 mesi sulle fecce fini in vasche d’acciaio.
