Lo Chardonnay realizzato da Elena Walch è un vino bianco dell’Alto Adige che si presenta sin dai primi istanti della degustazione con un biglietto da visita costituito da ampie note fruttate. L’ananas si alterna infatti alla più “locale” mela, in un susseguirsi di profumi da cui emergono i tratti tipici del varietale utilizzato. Una bottiglia elegante al palato grazie a un sorso sempre scorrevole, abile nel manifestare la massima armonia tra freschezza e mineralità. Un’etichetta che colpisce infine anche per l’interessante rapporto qualità-prezzo.
Questo Chardonnay nasce da vigneti situati in parcelle dal profilo collinare, che raggiungono un’altezza anche di 600 metri sul livello del mare. L’esposizione è verso sud-est, e la composizione del sottosuolo presenta una matrice principalmente calcarea. Gli acini vengono pressati sofficemente, e il mosto ottenuto effettua una decantazione statica. La fermentazione successiva si svolge in contenitori d’acciaio inox, a una temperatura controllata che non supera mai i venti gradi. Il successivo affinamento è svolto per qualche mese in acciaio, sino a quando dà inizio alle operazioni di imbottigliamento e commercializzazione.
Il vino bianco Chardonnay si rivela alla vista con un bel colore giallo paglierino. Il naso è delizioso, orchestrato intorno a note principalmente fruttate, arricchite anche da lievi sfumature che richiamano i fiori bianchi. All’assaggio è di corpo leggero, snello e beverino, caratterizzato da un sorso fasciante che fa leva su una trama rinfrescante e sapida. Un’etichetta firmata da Elena Walch che risolve sempre il problema quando non sappiamo che vino bianco mettere in tavola: godendo infatti di una notevole versatilità gastronomica, è sinonimo di successo!
