La Catalanesca è una varietà autoctona della zona del Vesuvio e, secondo il mito, fu impiantata proprio lì da Alfonso V d’Aragona, che ne aveva già intravisto le potenzialità.
Cantine Olivella ne ha creato il suo vino-simbolo, coltivandolo sulle antiche vigne a piede franco alle pendici del Monte Somma, nella zona vitivinicola più antica dell’areale; dopo una vendemmia manuale, le uve vengono subito sottoposte alla vinificazione e viene utilizzato soltanto il mosto fiore (la prima spremitura), che viene pulito con l’ausilio del freddo, in modo da non disperdere gli aromi tipici.
Dopo un lungo affinamento sulle fecce nobili ed alcuni mese di riposo in bottiglia, Katà vede la luce, ma è solo dopo qualche anno che riesce ad esprimere a pieno la sua forza vulcanica.
