It is with the “classic” line that the monks of the Novacella Abbey express all the finesse of the Alto Adige vintage wines. White and red wines that come from only the estate vineyards, whose fermentation and subsequent maturation take place only in steel tanks in order to maintain unchanged those characteristics of fragrance that have always distinguished the best products of the area.
Gewürztraminer brings with it all the aromaticity of the typology combined with a decisive freshness, a harmonious and very pleasant white, perfect to accompany the most diverse dishes.

Novacella Abbey
Il Gewurztraminer dell’Abbazia di Novacella nasce dall’obiettivo di vinificare il classico, la tradizione e, soprattutto, la qualità. Vige il dogma del “poco ma buono” nell’Abbazia di Novacella, cantina altoatesina legata all’ordine monastico Agostiniano. I vigneti di proprietà dell’Abbazia si estendono in parte sulla superficie della conca di Bressanone ed in parte nei pressi delle più calde Cornaiano e Bolzano. Questo Gewurztraminer appartiene alla cosiddetta linea base, o linea dei classici, e porta con sé tutto il timbro aromatico che caratterizza il vitigno bianco principe dell’Alto Adige. Da chi quelle terre le lavora e le cura da lunghissimo tempo, non poteva mancare il racconto personale di questo terroir incantato.
L’Abbazia di Novacella Gewurztraminer si compone di tale varietà di uva in purezza. Proviene da vigneti collocati ad un’altitudine compresa tra 600 e 700 metri sul livello del mare. Sono definiti da terreni ghiaiosi, limosi e sabbiosi, con filari esposti in direzione Sud e Sud-Ovest. Dopo la vendemmia, in cui le uve sono accuratamente selezionate e raccolte, i grappoli vengono sofficemente pressati ed il mosto ottenuto è avviato alla fase di fermentazione alcolica per mezzo dell’attività dei lieviti indigeni, all’interno di vasche di acciaio. Prosegue il suo corso con un affinamento di 6 mesi, sempre in contenitori di acciaio, per poi essere imbottigliato e messo in commercio.
Il bianco Gewurztraminer dell’Abbazia di Novacella si presenta con un colore giallo paglierino intenso. Il suo profumo si apre ad una complessità fruttata e floreale di rosa, litchi, fichi secchi e pompelmo, con un finale di spezia dolce come la vaniglia, del tutto attribuibile all’identità aromatica del vitigno. Un corpo di buona struttura ed un ottimo bilanciamento tra freschezza e alcolicità forniscono il supporto all’intensità gustativa che scandisce il sorso. Mantiene la fine eleganza altoatesina ed il carattere coinvolgente del vitigno.
