Il bianco alto-atesino Sauvignon “Castel Ringberg” è una delle chicche realizzate da Elena Walch a Termeno. Si tratta di un vero e proprio cru che mantiene, annata dopo annata, un elevato standard qualitativo, dove la complessità fruttata al naso si unisce a un’affascinante mineralità al palato, dando origine a un’esperienza degustativa armonica e coerente, in cui il liquido scorre con puntualità. Ed è proprio questo il bello di quest’etichetta, l’abitudine a sorseggiarla dopo poco come se si trattasse di un vino che beviamo da diverso tempo.
Questo “Castel Ringberg” di Elena Walch è un Sauvignon in purezza che nasce da quelle uve coltivate all’interno della vigna che dona il nome stesso all’etichetta. Ci troviamo a un’altezza sul livello del mare compresa fra i 330 e i 440 metri, esposti verso sud-est, all’interno di un terroir caratterizzato da roccia dolomitica, calcare e pietrisco. Gli acini vengono pressati sofficemente e il mosto effettua una decantazione statica. La successiva fermentazione alcolica avviene sia in contenitori d’acciaio a temperatura controllata sia in barrique – per il 15% della massa totale –. L’affinamento prosegue su questa scelta – acciaio e barrique, sempre con le medesime proporzioni – e si svolge sui lieviti per 5 mesi.
Il Sauvignon “Castel Ringberg” realizzato dalla cantina Elena Walch si annuncia alla vista con un colore brillante incentrato sulla tonalità del giallo paglierino, arricchito da lievi note più verdoline nell’unghia. Il naso è ampio e stratificato, ricco di sentori erbacei e fiori bianchi, da cui emergono, sul finale, anche tocchi più agrumati. In bocca è di buon corpo, ampio e fasciante, con un sorso caloroso e fresco al contempo, che viene esaltato da una bella mineralità. Una bottiglia pace di raccogliere consenso unanime, da parte di palati diversi tra loro.
