Il Fiano “Pian di Stio” è uno dei bianchi di punta della cantina San Salvatore. Questo straordinario vitigno autoctono campano, oltre ad esprimersi su alti livelli qualitativi in Irpinia, ha trovato anche nel Cilento una zona molto adatta alle sue caratteristiche. Il clima mediterraneo e la vicinanza del mare, contribuiscono allo sviluppo di aromi ricchi e intensi, ma sempre accompagnati dalla vivace freschezza che contraddistingue il vitigno. Elegante, floreale e fruttato, è un Fiano di forte personalità, dotato di un sorso profondo e persistente, che conquista fin dal primo sorso.
"Pian di Stio" Fiano viene realizzato da una delle cantine più dinamiche e innovative della zona del Cilento. La tenuta San Salvatore si trova a pochi chilometri dal famoso sito archeologico di Paestum, nel territorio incontaminato del Parco Nazionale del Cilento e Vallo di Diano. Le uve provengono dalle vigne di Fiano coltivate nel territorio comunale di Stio, a un’altitudine di 550 metri sul livello del mare. Il clima fresco, le buone escursioni termiche tra le temperature del giorno e quelle della notte e i terreni vocati di matrice calcareo-argillosa, consento al Fiano di produrre ottime uve. Al termine della vendemmia manuale, i grappoli sono sottoposti a un processo di criomacrazione per 6 ore. La fermentazione si svolge in serbatoi d’acciaio inox a bassa temperatura. Prima della messa in bottiglia, in vino riposa sulle fecce fini per sei mesi in vasche d’acciaio.
Il vino “Pian di Stio” è un bianco di buona struttura e persistenza aromatica, che si presenta nel calice con un bellissimo color giallo chiaro dai luminosi riflessi dorati. Seduce con delicati profumi floreali, aromi intensi di frutta a polpa bianca, pesca, mela verde, cenni di erbe della macchia mediterranea e leggere sensazioni iodate. Elegante e scorrevole, mette in luce un sorso profondo e sfaccettato, che s’allunga deciso e nitido verso un finale sapido e di vibrante freschezza. Grazie alla sua struttura, possiede un buon potenziale d’invecchiamento, con interessanti evoluzioni aromatiche.
