Entrecote è una parola francese che descrive la bistecca di manzo che è stata tagliata "tra le costole". Fondamentalmente, è un ribeye disossato, corrispondente alle bistecche conosciute in diverse parti del mondo di lingua inglese come Ribeye Steak o Scotch Filet. L'entrecote è una delle bistecche più popolari in circolazione grazie al suo sapore incredibilmente ricco, intenso e "beefy". E' tagliato appena sopra le costole, in un area che rende l'occhio di costola eccezionalmente tenero. Le venature di grasso che si trovano in tutta la carne aggiungono un grande sapore e il famoso "occhio" di grasso al centro, si riduce durante la cottura donando gusto e morbidezza. Ribeye di Wagyu allevato in Australia, il grado di marezzatura può variare da quello in foto. Proveniente da capi di Wagyu F1, ovvero un incrocio tra il Wagyu Giapponese e la Mitchell. Allevati completamente allo stato brado per circa 3 o 4 anni solo ad erba, quindi grass-fed, vengono poi spostati in centri di raccolta dove per un anno dove mangiano un mix di cerali, tra cui avena, sorgo, mais e semi di cotone, prima di essere venduti.
